I have just tried using BitPim with my LG VX-8600 and it's pretty easy.

BitPim was able to detect my phone right away so I didn't have to play with any of the settings.

The screen comes up with all the settings (phone book, media, wallpapers, call history, ringtones, etc)

Then, you can either get the data from the phone or send the data to the phone.

It works pretty well.
